Vegan... Day 4

Well, we've made it to day 4. Jess is doing much better than I am, I guess he has more motivation than I do :) After the success of my spanish rice recipe I found on allrecipes.com I got a little too excited and tried another adventurous meal I found on there. It was called Vegan Bean Taco Filling. The reviews were good and it seemed pretty basic but I HATED it. Jess was nice and said he liked it. I think it was the combo of cumin, paprika,cayenne pepper, and chili powder. Way too many spices and I even 1/2ed what recipe called for. After making that I've been a little bummed that I can't think of anything good to make. Obviously I could wrap stuff in a white tortilla or eat white bread but that would defeat the purpose of being healthy :) So tonight I made whole wheat spaghetti and put Trader Joe's Basil Marinara Sauce on top. It was yummy. Tried making a salad but have no salad dressings that don't have any dairy in them so it was gross. blah... 
And I feel bad packing Jess's lunch with gross dinner leftovers but he is such a trooper and is fine with anything. Tomorrow he is taking a tomato and vegan mayo sandwich on homemade wheat bread (Thanks Kristen!), spinach almond salad and some fruit! This boy has already LOST 10 pounds since being married (so not fair) and now he is going to wither away! 
On a semi happier note, we watched a mind blowing documentary called FOOD MATTERS the other night. amazing information to know and for anyone who cares about their health and well being should take the time to watch it. Very interesting. 
That's all for now.
I can't wait for Thanksgiving so I can eat delicious food that I didn't have to cook myself.

salad dressing is easy! I don't even buy salad dressing anymore. I just dribble some olive oil and red wine vinegar over my salad, and it is delicious! That is vegan, right?

Yes that would work! Is that really good?? I've been nervous to try just straight up oil and vinegar or oil and lemon. But I'm getting desperate!

i'm so impressed that you're trying this! it would be so tough! you need to watch food, inc. and fresh. also really good documentaries. {if you're only going to watch one, watch food, inc.} i'll give you a recipe that is a corn/bean/pepper taco filling. it just uses cumin & chili powder & it is really delicious! my family is obsessed with them. i kinda just guessed on some of the measuring, but it always tastes good, it's pretty fool proof. {and it's probably going to make this the longest comment in the history of blogger, but it's all good...}

corn relish tacos:
butter
1 can corn
1 can black beans
1 red bell pepper
cumin
chili powder
salt & pepper
avocado
cheese
corn tortillas

put about 1 tbls or so of butter in a large-ish frying pan. add drained corn. while you let that sautee, chop your bell pepper up into about 1/2" cubes and add it to the corn. while that cooks a little bit, drain your black beans & add them. season with cumin, chili powder, salt & pepper to your liking. warm up a corn tortilla in the microwave for about 10 seconds, then put some cheese on it. scoop some of the corn relish into it, then top with a couple slices of avocado. you can also add some salsa or hot sauce if you want. enjoy!!!

obviously you won't be able to use the cheese, but i think everything else will be ok.

Watch FOOD INC. documentary. It made me boycott Tyson chicken!
I have a bunch of vegan friends in my nutrition classes and we are always talking about food. Let me know if you have any questions ( I only have one year of school left! I'm getting up there with my knowledge haha!)
